In the cup; Blackberry, orange & plum. The acidity is complex and juicy. The body is medium with a silky, velvety texture, and the aftertaste is soft & clean.

The aim for us this year was to provide an exceptional coffee for the festive season. We discovered this varietal while cupping coffee’s from the El Placer Project. Over the past few years, there has been a growing trend of using rare coffee species and arabica varieties in World Coffee Championship (WCC) routines. While the highly-prized Gesha variety has long been a favourite of many competitors, more and more of them are now choosing lesser-known coffees.

One of these coffees is Sidra (also known as Sydra or Bourbon Sidra). It is becoming increasingly prominent at WCC events – and was notably used by the 2019 World Barista Champion Jooyeon Jeon in her winning routine and the 2022 World Barista Championship.

Sidra is currently commercially grown on a much lower scale than other arabica varieties – mainly because it results in the highest cup quality when grown above 1,700 m.a.s.l.

Wilder Lazo’s family is made up of a group of passionate coffee producers in San Adolfo (Huila). Throughout the years, they have faced many challenges to achieve their dreams.

After a devastating fire, they left their farm, but because of their father's determination, they came back to rebuild their crops and the entire farm. The whole family is involved in coffee production. Mom finds joy in gardening, while the kids specialize in different aspects of the business, from drying and processing. They have transformed their farm into a platform for specialty coffee, offering exceptional and exquisite flavours and aromas. Despite the hard times, they never gave up. Their dedication and passion have allowed them to provide a way of living and education for their children’s better future. Now, the entire family continues this legacy, ensuring Wilder Lazo’s coffee stands out among many discerning palates. Wilder Lazo’s history is a reminder of the importance of perseverance and hard work fuelled by love. His farm is a charming place where they cultivate specialty coffee, resulting from an entire family's effort and passion.
